Lemon, Coconut & Macadamia Slice

Ingredients:

Base
1/2 c almond meal 
1/2 c roughly chopped macadamias 
4 dates 
1-2 tbsp water (optional) 

Top layer
210g can of coconut condensed milk 
1/4 c lemon juice gently heated and mixed with 1 tbsp corn starch until thickened 
Zest of one lemon 
Pinch salt 

 

Method:
1.    Place almond meal and dates into a food processor and blend until combined add in water if its to dry. Place the mixture into a bowl and fold in macadamias, line a container and firmly and evenly press down the mixture then let set in the fridge while you make the top layer.
2.    In a bowl add all top layer ingredients and mix until combined and smooth, pour on top of base layer and let set in the fridge overnight or in the freezer for 2-3 hours and enjoy!
