All in under 30 minutes!
This dish is all about juicy, tender chicken paired with a bright, zesty lemon and the creamy goodness of coconut.
Perfect for a cozy weeknight meal or when you want to impress friends, this recipe is super easy to whip up!
Ingredients:
- 500g free range chicken thighs
- 1 organic lemon
- 2 cloves organic garlic minced
- 1 tbsp organic sesame oil
- 1 tsp mixed dried herbs
- 1 tsp smoked paprika
- 1 tsp chilli flakes
- 1 tsp fish sauce
- Pinch Salt and white pepper
- 1 can organic coconut cream
- Fresh organic parsley to top
Method:
1. Heat oil in a pan then add in chicken thighs and cook for 2-3 minutes on each side. Remove from pan and set aside.
2. In the same pan add in garlic and sauté for 1 minute then add in herbs smoked paprika and coconut cream and stir gently to combine.
3. Reduce to a simmer and add in salt pepper, fish sauce and juice of one lemon.
4. Add back in chicken thighs and cut up lemon and simmer on low for 10 minutes or until chicken is cooked through and sauce has thickened!
5. Serve with rice or noodles!
