Makes 2 bowls
Kofta recipe
⁃ 1/2kg Lamb mince
⁃ 1 tsp Cumin
⁃ 2 cloves Garlic, minced
⁃ Pinch of Salt
⁃ 1 Tbs Ghee
1. Combine mince, cumin, garlic and salt in a bowl, shape into small rectangles.
2. Heat ghee in a pan on medium heat and cook the koftas, rotating every few minutes until cooked.
Tzatziki
⁃ 1 cup of greek yoghurt
⁃ 1 Cucumber, grated
⁃ 1/2 Lemon, juiced
⁃ 1/2 tsp Cumin
⁃ Pinch of Salt
1. Grate the cucumber and add into a small. Mixing bowl, add the remaining ingredients and stir well.
Bowl
1 x Lettuce, washed
1 cup of Roasted pumpkin
2 springs of your favourite herbs (Mint used)
1.5 cups of cooked Brown rice
2 x Radish, thinly sliced
1. Assemble bowl with segments of brown rice, pumpkin, lettuce and radish. Place the koftas on top of the rice and drizzle on some tzatziki.
2. Add your sprig of mint on top.
3. Serve with some hot sauce or sweet chilli.
