This salad is perfect for those meals when you’re at absolute capacity & need to Keep It Super Simple (yet absolutely nourishing & delicious !)
From veggie box to table in under 10 minutes, you can dedicate your extra time to hiding the overflowing washing basket or letting your dog in to ‘vacuum’ the floors. Thank us later.
Ingredients:
- 1 fresh as organic baby cos lettuce
- ½ bulb organic fennel, sliced as thinly as you can without chopping your fingers off
- ½ organic red onion, sliced finely & doused in organic ACV & a pinch of salt to quickly pickle
- 1 organic orange, peeled & finely sliced
- Handful organic herbs, finely chopped (we’ve used parsley & coriander, but you could just use one, or sub with dill, chives or basil !)
- Peace, Love & Vegetables dill cashew cheese
Super simple vinaigrette:
- 1 TBS organic apple cider vinegar
- 3 TBS organic extra virgin olive oil
- Little blob of mustard
- Little blob of local honey
- S&P
~ Shake all ingredients in a jar until combined ~
Method:
Layer the lettuce, finely sliced fennel, quick pickled red onions & orange in a large serving bowl.
Top with dollops of the cashew cheese & finely chopped herbs.
Drizzle with the super simple vinaigrette just before serving ! Breathe out 🤍
