A simple yet absolutely scrumptious recipe that can be adapted to whatever salad veggies you have on hand. Fresh local blueberries add little bursts of sweetness which balances the salty umami-ness of the salad dressing perfectly.
Serve with some teriyaki chicken skewers or any grilled meat for a light, delicious dinner !
Ingredients:
- Big handfuls of Farmer Foster's organic rocket, washed & dried.
- A medium organic carrot, peeled into strips.
- A medium organic cucumber, washed & sliced thinly.
- Energetic greens sunflower sprouts, washed & dried.
- Local blueberries, cut in half if larger.
- White picked ginger (optional, but adds a nice little kick! Alternatively a sprinkle of seaweed kraut would work perfectly !)
- Handful of organic coriander, finely chopped.
- Local avocado (optional but adds a delicious creaminess to the salad)
Salad dressing:
- 2 TBSP organic extra virgin olive oil
- 2 TBSP organic soy sauce or tamari
- 1 TBSP rice wine vinegar
- 1 TBSP Mirin
- 2 TSP caster sugar
- 2 TSP organic sesame oil
- 1 organic Ukrainian garlic clove, finely grated
Combine all salad dressing ingredients into a jar & shake to combine. This keeps for up to a week in the fridge.
Layer all salad ingredients into your fave serving bowl & douse with the salad dressing ~ serve immediately 🤍
