Homemade Hummus

Ingredients

  • 400g can chickpeas
  • ½ tsp baking soda
  • 2 tbsp tahini
  • 1 small garlic clove
  • Juice and zest of small lemon
  • 1 tbsp extra virgin olive oil
  • 1½ tsp ground cumin
  • 2 tbsp beef or chicken bone broth (or water)
  • 2 tsp white wine vinegar
  • 3 ice cubes
  • Salt and pepper (to taste)

 

To serve

  • Paprika
  • Extra virgin olive oil
  • Crackers

 

Method

  1. Add the drained chickpeas to a small saucepan with baking soda and a pinch of salt. Cover with water and bring to the boil. Reduce to a simmer and cook for 10-15 minutes, skimming off any foam that rises to the surface.
  2. Drain the chickpeas and transfer them to the centre of a clean tea towel. Fold the towel over and rub the chickpeas to loosen the skins. Discard any loose skins. We peeled the remaining chickpeas but this step is completely optional. It just makes for the silkiest hummus ever!
  3. Add chickpeas, tahini, garlic, lemon juice and zest, olive oil, cumin, bone broth (or water), vinegar, ice cubes, salt & pepper to a blender or food processor. Blend until completely smooth and adjust seasoning as needed.
  4. Transfer to a bowl and top with a drizzle of olive oil and a sprinkle of paprika. Serve with crackers.
