We had leftover potatoes from making mash and wanted to turn them into something more exciting! The flavour works so well with the creamy cashew cheese, the perfect lunch alongside a piece of fresh fish or braised lentils.
Ingredients:
- 2 cups leftover boiled potatoes
- 4 tbs Cashew cheese
- 1 tbs Whole grain mustard
- A few sprigs of Dill
- 1 Celery Stick, sliced
- 1 tsp capers
- 1tbs Olive oil
- salt and pepper
Method:
1. Roughly chop the leftover potatoes up and fry them up with olive oil over medium heat until crispy
2. Pour into a bowl and add the cashew cheese, mustard, dill, celery, capers, olive oil, salt and pepper
3. Stir until combined, enjoy by itself or alongside your favourite protein. Add some lentils or chickpeas if you’d like some extra protein/fibre.
