Harissa Garlic and Lemon Roast Chicken

Harissa garlic and lemon roast chicken 🍗 

Ingredients:
1 whole fresh chicken 
2 tbsp olive oil 
Zest of one lemon + juice 
3 cloves garlic minced 
1 tsp mixed dried herbs 
1 tbsp harissa paste 
Pinch salt 
1/2 tbsp smoked paprika 
2 sweet potatoes 
2 carrots 
4 baby potatoes 

Method: 
Preheat oven to 180 degrees, cut up veggies and place in a baking tray and then place chicken in the centre. In a bowl mix together all remaining ingredients to make a paste (save the lemon) smear the paste under the skin of the chicken breasts and then all over the top of the chicken.  Use the leftovers of the lemon and stuff it in the chicken, using twine tie together the legs of the chicken and then place into the oven to bake for 1 hour! I used the juices of the chicken after baking to make a quick gravy just add the juices to a pan along with 1 tbsp corn starch some extra chicken stock, Worcestershire sauce and a little bit of honey and stir until thick!
