Ginger & Miso Pumpkin Soup
Ingredients
  • Half an organic pumpkin diced
  • 1/2 organic onion diced
  • Thumb size organic ginger thinly sliced
  • 2 tbsp organic extra virgin olive oil
  • 2 tbsp organic miso paste
  • 1/4 cup of organic coconut cream
  • 2 cups chicken of veggie stock

Method:

1. In a large soup pot heat up organic extra virgin olive oil and add in organic onion and organic ginger.

2. Sauté until fragrant then add in diced organic pumpkin, stock and organic miso paste.

3. Simmer for 20-30 mins or until the pumpkin has softened.

4. Blend everything together until smooth.

5. Stir in organic coconut cream & enjoy with your favourite organic sourdough.
