Tacos are a fun and healthy way of eating which gives you an opportunity to make the plate look very appealing while being cooked in very little time.
Ingredients:
- 250-300g Fresh fish
- Tortillas
- 1/8 Red cabbage
- 1.2 Avocado
- 1/4 Red onion
- 1/3 Red chilli
- 1/4 Tomato
- Smoked paprika, cumin, salt
- 1 Mango cheek
- Apple cider vinegar
- Olive Oil
Toppings:
Mango salsa / Red cabbage
Guacamole / Spicy mayo
Method:
1. Cut your fish (or make it veggio) same size as the tortillas that you are using and pan fry with some oil, lemon zest & salt.
2. Chop cabbage very fine. Smash avocado. Dice onions very thin for salsa and
guacamole.
3. Chop cilli and tomato for guacamole. Small veggies for guacamole will give a nicer texture, add to avocado with smoked paprika, cumin and salt. Mix well in a bowl.
4. Dice mango, add to onion with olive oil, apple cider vinegar, salt & pepper. Mix well.
