Fish and Prawn Tacos by Natasha Slade
For the prawns:
- 12 raw prawns, peeled
- 1 tbsp Tweed Real Food Fiesta Mexicana or Smokey Cue Seasoning
- 1 Tbsp Organic Olive Oil
For the fish:
- 3 pieces of Dory or Snapper fillets, cut into two or three pieces
- 1 Tbsp olive oil
- 1 cup brown/jasmine rice crumbs
- 1 Tsp smoked paprika
- 1/2 Tsp garlic powder
- 1 Tsp cumin powder
- 1 Tsp coriander powder
To serve:
- 1 red capsicum, sliced
- 1 Red onion, sliced
- Red cabbage, sliced
- Fresh tomato, sliced
- Cheese, grated
- Lettuce
- 1 cup Greek yoghurt or plain coconut yoghurt
- Juice of 1/2-1 lime
- Byron Naked Foods Chipotle
- Dona Cholita Blue Corn Tortillas
In a bowl, add the olive oil and Mexican spice mix and toss the prawns through to coat. Allow to rest.
In another bowl, add the brown rice crumbs and the spices and combine. In another bowl, add the fish and olive oil and coat the fish. Once coated, add each piece of fish to the crumb mix and press to coat. Add the fish to an oiled air fryer and add a drizzle of olive oil, cook to the machine's instructions. If you don't have an air fryer, you can pan fry. Once cooked, add to a platter to serve.
While the fish cooks, add a dash of olive oil to a pan and sauté the capsicum and red onion until soft, transfer to a serving bowl.
In another bowl add the yoghurt and the juice of half a lime. Taste and if it needs more, add a little more lime juice.
Slice the tomato, cabbage and lettuce and add to serving platter along with the grated cheese.
Warm the tortillas in a hot pan as per the packet instructions. While the tortillas are heating, add the prawns to an oiled pan and cook for 3-4 minutes per side. Add to a serving bowl.
To serve, load of a tortilla with fresh salad, chipotle, yoghurt and either crispy fish or yummy prawns.
