Feeling hungry? No worries! Here is a great way to break your fast using only one pan!
- 1 or 2 red capsicum
- 4 potatoes
- 1 onion
- 2 cloves garlic
- 6 eggs
Pre-heat your oven at 180-200C if you would like to bake your eggs but you can finish in the pan if you are in a hurry
Method
Dice your onion, potatoes and capsicum all to the same size.
Heat up your pan and start by cooking your potatoes in a generous drizzle of olive oil.
Bring the heat to medium so you potatoes can cook slowly and without burning, add a
little water to keep the pan moist but not too much because this ain’t a soup!
Once your potatoes are cooked, add onions and red capsicum. Toss them for a couple
of minutes and add your eggs.
Shave some Parmesan over the top if you like dairy, place in the oven till eggs are cooked to your liking.
