Dragonfruit Coconut Chia Pudding

Dragonfruit Coconut Chia Pudding

  • 1 x flesh of Pink Dragonfruit, save a few pieces for topping
  • 250ml coconut cream/milk
  • 2 tbs Maple Syrup
  • 125ml Water or Coconut Water
  • 5 tbsp Chia seeds


Toppings

  • Milk kefir
  • Muesli or granola
  • Pieces of dragonfruit


Method
        1.      Place dragonfruit pulp, coconut milk, water and maple syrup in a blender and blitz until combined.
        2.      Pour the mixture into a big glass jar or container, add the chia seeds and stir through, then cover and refrigerate for 4-5hours over overnight.
        3.      To serve, dish out into a bowl or glass cup, top with kefir or yoghurt, muesli and extra dragonfruit of berries.
