Dragonfruit Coconut Chia Pudding
- 1 x flesh of Pink Dragonfruit, save a few pieces for topping
- 250ml coconut cream/milk
- 2 tbs Maple Syrup
- 125ml Water or Coconut Water
- 5 tbsp Chia seeds
Toppings
- Milk kefir
- Muesli or granola
- Pieces of dragonfruit
Method
1. Place dragonfruit pulp, coconut milk, water and maple syrup in a blender and blitz until combined.
2. Pour the mixture into a big glass jar or container, add the chia seeds and stir through, then cover and refrigerate for 4-5hours over overnight.
3. To serve, dish out into a bowl or glass cup, top with kefir or yoghurt, muesli and extra dragonfruit of berries.
