Ingredients
250g whole almonds
180g block of dark chocolate
6 Egg whites
1/3 cup Organic Pure Maple Syrup
250g Fresh Medjool Dates
Serve with whipped cream, mascarpone or ricotta
Method
Preheat oven to 180
Finely chop the dates.
In a blender/food processor/NutriBullet add the almonds and chocolate. Blitz until in chunky, even sized pieces.
Beat the egg white until soft peaks then slowly add the maple syrup.
Gently fold in the almond/chocolate/date mix into the egg whites.
Pour into a lined springform 24cm cake tin.
Bake for 45 minutes then allow it to cool in the oven with the door slightly ajar.
Store in the fridge overnight before serving.
