Crispy Tofu with Organic White Dashi Stir Fry
Ingredients:
- 1 block of organic tofu
- 2 tablespoons organic white dashi
- 1 tablespoon sesame oil
- 2 tablespoons ghee
- 2 shallots, thinly sliced
- 1 carrot, julienned
- 1 capsicum (bell pepper), thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- Salt and pepper to taste
- Sesame seeds for garnish (optional)
- Green onions, chopped, for garnish (optional)
Instructions:

Prepare the Tofu:
- Press the tofu to remove excess water. Slice the tofu into cubes.

Fry the Tofu:
- Heat ghee in a pan over medium-high heat.
- Fry the tofu cubes until they become golden brown and crispy on all sides. Remove and place on a paper towel to drain excess ghee.

Prepare the Sauce:
- In a small bowl, mix together organic white dashi, and sesame oil. Set aside.

Stir Fry Vegetables:
- In the same pan, add a bit more ghee if needed.
- Add shallots, carrots, and capsicum. Stir fry for 3-4 minutes until the vegetables are tender but still crisp.

Add Aromatics:
- Add minced garlic and grated ginger to the vegetables. Sauté for another 1-2 minutes until fragrant.

Combine and Season:
- Return the crispy tofu to the pan with the vegetables.
- Pour the prepared sauce over the tofu and vegetables. Toss everything together until well-coated. Taste and add some water if you find this is too salty or al little more dashi if you are keen for more flavour.
- Season with salt and pepper to taste.

Garnish and Serve:
- Garnish with sesame seeds and chopped green onions if desired.
- Serve the crispy tofu stir fry over rice or noodles.
