Crispy Tofu with Organic White Dashi Stir Fry

Ingredients:

  • 1 block of organic tofu
  • 2 tablespoons organic white dashi
  • 1 tablespoon sesame oil
  • 2 tablespoons ghee
  • 2 shallots, thinly sliced
  • 1 carrot, julienned
  • 1 capsicum (bell pepper), thinly sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • Salt and pepper to taste
  • Sesame seeds for garnish (optional)
  • Green onions, chopped, for garnish (optional)

Instructions:

  1. Prepare the Tofu:

    • Press the tofu to remove excess water. Slice the tofu into cubes.
  2. Fry the Tofu:

    • Heat ghee in a pan over medium-high heat.
    • Fry the tofu cubes until they become golden brown and crispy on all sides. Remove and place on a paper towel to drain excess ghee.
  3. Prepare the Sauce:

    • In a small bowl, mix together organic white dashi, and sesame oil. Set aside.
  4. Stir Fry Vegetables:

    • In the same pan, add a bit more ghee if needed.
    • Add shallots, carrots, and capsicum. Stir fry for 3-4 minutes until the vegetables are tender but still crisp.
  5. Add Aromatics:

    • Add minced garlic and grated ginger to the vegetables. Sauté for another 1-2 minutes until fragrant.
  6. Combine and Season:

    • Return the crispy tofu to the pan with the vegetables.
    • Pour the prepared sauce over the tofu and vegetables. Toss everything together until well-coated. Taste and add some water if you find this is too salty or al little more dashi if you are keen for more flavour.
    • Season with salt and pepper to taste.
  7. Garnish and Serve:

    • Garnish with sesame seeds and chopped green onions if desired.
    • Serve the crispy tofu stir fry over rice or noodles.
