Ingredients:
5 shiitake mushrooms
1/2 c red cabbage
1 tbsp Thai red curry paste
Rice paper sheets
Oil for frying
Method:
1. In a food processor add in your shiitake mushrooms, cabbage and curry paste and blitz until well combined
2. Lightly wet rice paper sheets and add 1-2 tbsp of mixture into the centre, fold the sides in on each-other to make a square and then proceed to wet another rice paper sheet and double wrap your dumpling continue this until all the mixture is used.
3. Lightly oil a pan on medium low heat and fry your dumplings for 3-4 minutes each side
4. Lastly serve with toppings of choice I did soy sauce shallots, coriander
