Ingredients:
1 bunch of kale
1 tin of chickpeas drained
1 tbsp olive oil
Salt
1 tsp smoked paprika
1 tsp mixed herbs
Avocado and lime to top
Dressing:
2 tbsp tahini
1 tbsp miso
2 tbsp apple cider vinegar
1 tsp maple syrup
1 tsp olive oil
Pinch pepper + water if needed to thin out
Method:
1. Preheat oven to 180 degrees, line a baking sheet and spread out drained chickpeas, drizzle with olive oil salt, smoked paprika and mixed herbs and mix well and bake for 30-35 minutes or until crispyyy.
2. In a large mixing bowl add in all dressing ingredients and mix well. Break up kale with hand and place in the bowl massage with your hands to break down the kale.
3. Add in cooked chickpeas and mix well, serve with avocado and a squeeze of lime.
