Coconut Amino Chicken & Rice Bowl

Ingredients:

  • 500g Chicken Thigh
  • 3 Tbsp Coconut Aminos
  • 1 Tsp Olive Oil
  • ¼ Red Cabbage
  • Pinch of Salt
  • 1 Tsp Apple Cider Vinegar or Rice Wine Vinegar
  • 1 Cucumber, sliced
  • 1 Avocado, sliced 
  • Cooked rice, Furikake, Seaweed and extra Coconut Aminos to serve

Method: 

  • Place chicken thighs in a bowl and add in coconut aminos, give it a good mix and let marinate in the fridge for 30mins.
  • Meanwhile add your cabbage to a bowl along side vinegar and salt and give it a good mix. 
  • Once the chicken is done marinating, heat olive oil in a pan on medium heat and add in chicken thighs, after 1-2 minutes turn the heat down to medium low and cook for 10mins before flipping and cooking for another 8-10 minutes or until cooked through. 
  • Slice up your chicken thighs and assemble on a plate with rice, cabbage, cucumber, avocado, seaweed, furikake and a drizzle of coconut aminos.
