Ingredients:
- 500g Chicken Thigh
- 3 Tbsp Coconut Aminos
- 1 Tsp Olive Oil
- ¼ Red Cabbage
- Pinch of Salt
- 1 Tsp Apple Cider Vinegar or Rice Wine Vinegar
- 1 Cucumber, sliced
- 1 Avocado, sliced
- Cooked rice, Furikake, Seaweed and extra Coconut Aminos to serve
Method:
- Place chicken thighs in a bowl and add in coconut aminos, give it a good mix and let marinate in the fridge for 30mins.
- Meanwhile add your cabbage to a bowl along side vinegar and salt and give it a good mix.
- Once the chicken is done marinating, heat olive oil in a pan on medium heat and add in chicken thighs, after 1-2 minutes turn the heat down to medium low and cook for 10mins before flipping and cooking for another 8-10 minutes or until cooked through.
- Slice up your chicken thighs and assemble on a plate with rice, cabbage, cucumber, avocado, seaweed, furikake and a drizzle of coconut aminos.
