Choc Beetroot Cake w/ Avocade Ganache

It's moist, rich & it's simpler than ever. With the most incredibly delicious avocado ganache to top it all off.

This recipe seems to be defying the odds. Since when would you find beetroot and avocado in cake?!

Ingredients:

  • 1cup organic coconut sugar
  • 1/3 cup melted organic coconut oil or butter
  • 1 3/4 cup organic flour
  • 3/4 c organic cocoa powder
  • 1 cup organic soy milk
  • 3/4 cup water
  • 2 tsp baking powder
  • 1 tsp vanilla essence
  • 1 cup cubed organic beetroot


Frosting:

  • 1/3 cup melted organic chocolate
  • 1/2 organic avocado
  • 1/3 c organic soy milk

Method:

1. Start by mixing together melted chocolate and soy milk to form a ganache then add in mashed organic avocado, mix well and then let set in the fridge.


2. Preheat oven to 180 degrees, line a cake tin with baking paper.

3. Add beetroot and milk to a blender and blend until emulsified.

4. Add mixture to a bowl along with remaining wet ingredients and mix well.

5. Add in dry ingredients and mix until combined.

6. Transfer mixture to your lined baking dish and bake for 50min - 1 hour or until a skewer comes out clean.

7. Let cool completely before topping with the avocado ganache and serving.
