Ingredients
Sauce
2 egg yolks
1 c bone broth
1/4 c finely grated Parmesan
1 tbsp Fresh parsley and chives finely chopped
1/2 tsp garlic powder
Salt and pepper
200g pasta of choice I used a higher protein and fibre brand
1 c broccoli florets
1 c peas
2 chicken thighs diced
2 handfuls rocket
Method:
- Cook pasta according to packet instructions
In a bowl combine all sauce ingredients and set aside
- Heat up a large frying pan and oil before adding in your diced chicken thighs and fry for 3-4 minutes.
- Next add in broccoli and peas and cook everything for another 5-6 minutes or until chicken is cooked through.
- Add in cooked pasta pour over your sauce and give everything a good mix until the sauce becomes thick and creamy.
- Take pan off heat and stir in rocket and enjoy!
