Ingredients:
- 2 slices freshly cut sourdough bread
- 1 piece of Teriyaki Tofu
- 3 tbs Dill Cashew Cheese
- 8 slices Cucumber
- 1/4 cup of Purple cabbage, finely sliced
- A few pieces salad mix / lettuce leaves
Method:
1. Fry up the tofu and set aside
2. Prep all the salad ingredients, washing, slicing
3. Assemble: spread a nice thick layer of the dill cashew cheese on the bottom slice of bread. Layer on the salad, tofu and top slice of bread.
4. Enjoy for lunch in the sun!
