Brothy-Herby-Beans-Ingredients

A yummy lunch or breakfast option - simply add a fried egg on top! Serve with a side of bread or toast to soak up the delicious broth.

Ingredients:

  • 2 tins of beans of choice. I used butter and adzuki. Or you could use dried beans soaked overnight.
  • 1 1/4 cups water with 2 tbsp bone broth paste, I use @gevityrx alternately you could use stock or a liquid bone broth
  • Handful of finely chopped fresh parsley
  • 2 cloves garlic
  • 1 leek, white part only, finely sliced
  • 2 rashes nitrate free bacon, or you could use chorizo
  • 1 tbsp red wine vinegar
  • Zest of 1 lemon
  • Salt and pepper to season

 

Method:



Heat some olive oil in a pan, and add the leek, garlic, and bacon. Cook until soft. Then add in the rinsed and drained beans, bone broth, lemon zest and red wine vinegar. Simmer for 15 minutes ensuring the liquid does not all reduce. If so, add more broth so it doesn’t dry out and make the beans mushy. Add the parsley and mix through.

Serve with some fresh bread or toast lathered in butter.
