Bone Broth Kimchi Noodle Soup

Ingredients

  • 1-2 cups of Gevity Bone Broth 
  • Handful of Peace, Love & Vegetables Kimchi
  • Sesame oil 
  • Handful of diced organic garlic and ginger
  • 1 tbsp fish sauce
  • 1 tsp white pepper 
  • 1 tsp chilli flakes
  • ½ sliced brown onion
  • 1 small tomato, chopped into cubes
  • Handful spring onion 
  • 1/2 sliced red capsicum
  • Handful diced organic tofu
  • 100g sweet potato noodles
  • Handful sliced mushrooms of choice 

Method:

1. In a pot on high heat, add sesame oil, handful of diced garlic and ginger, sliced ½ brown onion and sauté for a couple of minutes.

2. Add in 1-2 cups of bone broth of your choice. Stir through.

3. Turn heat to medium and add diced tofu, cubed tomato, sliced mushroom and sliced capsicum. Stir through and let simmer for 5 minutes.

4. Add white pepper, fish sauce, kimchi and chilli flakes. 5 minutes later add your sweet potato noodles and simmer for about 10 minutes or until fully cooked through.

5. Serve in a bowl and top with sliced spring onion and a dash of sesame oil. This immune boosting soup will help you with the colder months coming through!
