Banana Fritters

What is our vibe is these BANANA FRITTERS - with their crispy exterior giving way to a warm, soft, and sweet centre. Move over banana bread - banana fritters is where it's at!

Ingredients

  • 3 big (or 4 smaller) ripe organic bananas
  • 3/4 cup Self Raising flour 
  • 1 tablespoon rice flour 
  • 1/2 tsp cinnamon 
  • 1/2 tsp nutmeg
  • 1 tablespoon melted butter (optional)
  • 2 tablespoon of brown sugar (optional)
  • 1 tsp vanilla seeds or essence 
  • Pinch of salt
  • Neutral oil for frying (coconut oil or butter works/tastes best!)
  • Yoghurt or cream to serve (optional)

Method

1. Mash bananas with a fork, mix remaining ingredients but be careful to avoid over mixing!

2. Batter should not be too thick or thin but should flow easily off a spoon.

3. Pour enough oil into a hot fry pan to cover the bottom and once the oil is hot turn down to medium heat, pour the batter in by the spoonful. Once the fritters get little holes and are golden on the bottom (2-3 minutes) turn and cook the otherside. 

 Notes:

-Overworking the flour (gluten) will make your fritters gummy/gluey.

- ANY flour can be exchanged for Self Raising just add a tsp of baking powder to lighten your mixture.

- ANY or no sweeteners can replace brown sugar

- Rice flour isn’t essential however it will make the fritters crispy!

-Any of your favourite spices can be swapped eg cardamom clove etc.
