Salad Sides

These earthy, vibrant salads are so simple to make yet the flavour combos are next level.

Pear & Beetroot
⁃ 1 x firm Pear, cut into slices
⁃ 3-4 Beetroot, steamed and cut into chunks
⁃ 1 cup cooked Brown Lentils
⁃ 1-2 cubes Goats Cheese
⁃ 1 tbsp Olive oil
⁃ Sprinkle of Dukkah

1.Cut up / cook all the components (pear, beetroot and lentils)
2. Place the lentils on the bottom, then chunks of beetroot and pear slices.
3. Break up the goats cheese on top, drizzle the olive oil on top and then a sprinkle of dukkah, serve alongside your favourite protein dish.

Fennel & Orange
⁃ 1 x Fennel bulb
⁃ 1 x Orange, sliced into segments
⁃ 2 tbs Olive oil
⁃ 1 tbs Apple cider vinegar
⁃ Sprinkle of Black sesame seeds

1. Mandolin (or finely slice) the fennel bulb and scrunch light with your hands if you need to soften it, and add to a salad bowl.
2. Slice up the orange into segments and add to the bowl.
3. Pour over the olive oil and apple cider vinegar.
4. Sprinkle the black sesame seeds on top and serve with your favourite protein
