Food on the Flame Series
Ingredients
The Filling
- Organic apples (depending on how big you want it 5-8 apples or MORE!)
- 1 x pack Ceres Organics tart-cherries
- Organic juice of your choice (a few dashes to add to your filling so it doesn’t stick)
- Cinnamon or your other favourite organic spices
The Crumble
- 1 part organic coconut sugar
- 2 parts organic self raising flour
- 3 parts organic butter
- Organic oats (optional)
Depending on how sweet, rich or crumbly you want it to be, feel free to adjust the ratios!
Method
- Get that fire started! You want to start early as it is best to work over hot coals rather than direct hot flames that could burn your precious filling.
- Depending on your set up, you’ll need a contraption for your cast iron pot to sit on or hang over – I’ll let you get creative with this part!
- Thinly slice your organic apples!
- Once you’ve got some nice hot coals to work with - place your apples in your pot with a dash of juice and the tart cherries. Pop on that lid to get the party started.
- Check every so often, giving them a stir until they get all saucy, yummy and gooey. Keep adding juice as needed until it reaches your desired consistency.
- Add in those spices too!
Prepping the crumble
- My trick is to chuck the butter in the freezer and grate it into the dry mix.
- Use your hands to crumble it all together.
- Have a taste, it should be DELICIOUS already.
Putting it all together
- Once your filling is ready take it off the coals or reduce the heat at the bottom of the cast iron pot.
- Crumble the crumbly goodness on top and add the lid.
- Carefully add hot coals on top of the lid to create heat from above for the crisp crumble!
- Be patient because if it’s not ready and you take those coals off you’ll have to add them back on again!
- Keep that fire burning and enjoy (with some of Cheeses Love’s You Crème Fraiche)
