This rendition of a classic Aussie bikkie makes a perfect snack to feed your hungry troops. Can be made with our organic oats or gluten free oats
Ingredients:
1 cup of Oats ( we used GF Oats, but traditional Organic Oats are great too)
1 cup organic plain flour ( use gluten free if you want to keep these Bikkies GF)
1 cup desiccated coconut
1/2 cup brown sugar
125 gms unsalted butter
2 tablespoons golden syrup
1/2 tsp bi~carb soda mixed with 2 tbs boiling water
Method:
1. Line two baking sheets with baking paper & preheat oven to 180c
2. Combine the butter & sugar in a saucepan & heat until the butter has melted.
3. Pour the bi~carb mix into the saucepan (the mixture will foam up, don’t panic !)
4. Add the wet ingredients to the dry ingredients & mix gently with a wooden spoon until combined. Using a tablespoon, scoop even ~ ish amounts of the batter into your hands, rolling firmly into balls.
5. Place bikkies on the lined baking tray (approx 6~8 per tray) & press down with a fork to flatten.
6. Blow them a kiss & pop them in the oven for 12 minutes, rotating the trays half way through to ensure they cook evenly. Cool them on the tray completely to get a truly crispy delicious ANZAC bikkie !
