Autumn Pears

Two lovely Autumn recipes for you using the humble 🍐

Chai poached pears

4 large organic pears
1 tsp cinnamon
1 tbsp chai tea
1/4 tsp ground cloves
1/2 tsp nutmeg
2 cups boiling water

Halve the pears and add to an oven proof dish. Add in the tea and spices and pour over the boiling water. Bake in the oven, uncovered for an hour at 180 C. I store them in the fridge in a jar with the poaching liquid in as well so they continue to marinade. Serve on top of porridge, yoghurt, with an egg custard or bake into a cake.

Pear, apple & berry crumble

1/3 cup desiccated coconut
1/3 cup tapioca flour
1 cup organic rolled oats
1/3 cup maple syrup/brown sugar or honey
1 tsp cinnamon
100g unsalted butter, at room temp

1/3 cup mixed frozen berries
2x or pears
2x apples (I often use the half eaten ones from my toddler!)
Splash of water
1 tsp cinnamon
1 tsp nutmeg

For the apples and pears, chop into similar sizes pieces and add to a saucepan with the spices and water. Cook for 15 minutes or until the fruit starts to soften. Place in an ovenproof dish and top with the frozen berries.

For the crumble, place the oats, tapioca, coconut, sugar and cinnamon in a bowl and mix. Use your hands to rub in the butter until it resembles a crumble. Add the crumble to the fruit mix and bake in a 180 C oven for 50 minutes. Serve with double cream, mascarpone or a good quality vanilla ice cream.
